OUR CUISINE


We paid a particular attention to our cuisine. A modern space of 500 square metres where our chefs express their quality through the use of local product. Our dishes are freshly prepared under the expert guidance of our Executive chef Raffaele de Giuseppe.
From 2005 Raffaele de Giuseppe is the Executive Chef and Restaurant Manager of Relais Masseria Montalbano.
He knows very well traditional flavors of Puglia and also cultivates a deep passion for the international cuisine. He has been a member of the Italian Cuisine Accademy and he is also an important member of the “Les Disceples d’Auguste Escoffier”.
He is a technical director of Eccelsa Institute in Alberobello and one of the most important  teacher of the Boscolo Etolie Accademy.
He published the following books: “Un bel piatto di pasto” in 2008 and “Pesce Azzurro” in 2009 and he is one of the leading of the book “Banqueting and Catering”
